Light Coconut Tiramisu

The famous layered sponge dessert from Italy.

Ingredients (2 glasses):

For the cream

  • 150 g fromage frais (low fat)
  • 150 g natural yoghurt
  • 100 g mascarpone 
  • 50 g coconut flakes
  • 50 g coconut blossom sugar
  • 2 eggs
  • Lemon zest
  • Stevia
  • Cinnamon

For the layers:

  • Approx. 6 whole-wheat biscotti
  • 1 cup of coffee
  • Rum
  • Cocoa powder

Preparation (takes around 15 mins):

For the cream, blend all ingredients together in a bowl until combined, and set aside.

Add a little rum to a cup of coffee and dunk the biscotti in it; lay these then in a glass or small dish. Spread a layer of cream over the biscotti layer. Repeat this process until the glass (I like to use a small mason jar) is full.

Dust with cocoa powder and leave to marinate overnight in the fridge.
